Simple Stuffed Artichokes

Ingredients:

Artichokes (depending how much you can handle or how many you are feeding)

  • A tin of Large Tuna 1 is enough to stuff two artichokes

  • Olives add to your liking

  • Parsley

  • Bread Roll a medium one will fill two

  • Parsley

  • Olive Oil

  • Salt & Pepper


Method:

  • Give the stuffing a good mash up

  • Wash the artichokes very well, best you leave them soaking for 10 minutes, in warm water.

  • There might be snails and a worm or two, and you don't want to eat that :) Yukk. Give them a bang or two on a chopping board to avoid these accidents.

  • Remove the centre leaves to make space for the stuffing

  • Steam them in a steamer or put them in a pot with enough water at bottom ( keep an eye on the water, it might dry and you might need to add more till cooked.

  • To know if they are ready...grab a taste.

  • Enjoy a simple and inexpensive dish.
