Coloured Peppers, Mushrooms & Coconut Milk

Ingredients:
Onions
Garlic
Red, Green, Yellow, Orange Peppers
Mushrooms
Fresh Parsley
Fresh Basil
Coconut Milk
Olive oil
Salt & Pepper
Method:
Chop all the veg in bite size.
Start by cooking the onion and garlic in Olive oil, and gradually add the rest of the veg and herbs.
When all the veggies are cooked, add the Coconut Milk and cook for a further 15 minutes.
Enjoy.
