Quick Savoury Pumpkin Pie

Ingredients:

  • Pumpkin ( I used around 400 grams )

  • 2 Eggs

  • Milk

  • Sfoglia Pastry ( Mine is ready made)

  • Pinch of Ground Nutmeg

  • Salt & Pepper

  • Parsley


Method:

  • Place the pastry in a large bowl, with the baking paper at the bottom

  • Boil or roast the pumpkin ( remove access water)

  • Use a hand blender to mix the eggs, pumpkin, milk, salt & pepper & parsley together

  • Pour in the dish

  • Bake until golden and the mixture is nice & dry.
