Peas & Spinach Risotto

Ingredients:

( Calculate the amount of ingredients based on the number people you are serving)

  • Arborio Rice

  • Frozen Peas ( if fresh better)

  • Fresh Spinach

  • Onion

  • Garlic

  • Stock ( chicken or beef or veg, what you prefer)

  • Olive Oil

  • Salt & Pepper

  • Water


Method:

  • Chop the onion and garlic and fry in Olive Oil until slightly brownish.

  • Add peas & Spinach.

  • Once the Spinach has cooked add the stock, and water and bring to boil

  • Mix in the rice and cook until the water is absorbed and you have a creamy consistency.

  • Please note that you need to stir the rice continuously, otherwise it will get stuck.
