Pearl Barley with Mushrooms and Spinach

Ingredients:

  • Pearl Barley

  • Onions

  • Mushrooms

  • Spinach

  • Olive Oil

  • Vegetable stock

  • Salt & Pepper


Method:

  • Soak Pearl Barley a night before preparing the dish.


Preparing the dish:

  • Cook Barley by boiling in some veg stock. Once cooked drain from water and set aside.

  • Chop the onion is small pieces and cook in Olive Oil

  • Add the mushrooms finely chopped and cook

  • Add the spinach

  • Add the cooked barley and and a cup of water with vegetable stock.

  • Cook until the water is absorbed

  • Enjoy :)
