Pearl Barley with Mushrooms and Spinach

Ingredients:
Pearl Barley
Onions
Mushrooms
Spinach
Olive Oil
Vegetable stock
Salt & Pepper
Method:
Soak Pearl Barley a night before preparing the dish.
Preparing the dish:
Cook Barley by boiling in some veg stock. Once cooked drain from water and set aside.
Chop the onion is small pieces and cook in Olive Oil
Add the mushrooms finely chopped and cook
Add the spinach
Add the cooked barley and and a cup of water with vegetable stock.
Cook until the water is absorbed
