Mixed Vegetables and Butter Beans Stew

Ingredients:
Onions
Carrots
Aubergine
Broccoli
Brussel Sprouts
Butter Beans (Dried and Soaked)
Green Pepper
Yellow Pepper
Red Pepper
Orange Pepper
Olive Oil
Vegetable Stock
Tomato Paste
Salt & Pepper
Method:
Soak the dried beans in water for 24 hours and change the water twice during the soaking.
Chop all the veg in bite sized pieces, apart from the Brussel Sprouts and the Broccoli.
In a deep pan or wok start frying the onion until it is soft and gradually all the veg until all the veg are semi cooked.
Remove the beans from the water and add the Butter beans.
Add the water till all the veg is covered.
Add the tomato paste and veg stock.
Cook till the water is half absorbed.
