Kusksu Pasta (Traditional Maltese)

Ingredients:


Calculate your own ingredients according to the number of people.

The below is based on 500 grams of Pasta

  • Kusksu pasta ( Also known as Tempesta )

  • Potatoes

  • Onions

  • Broad Beans or Peas

  • Chicken or Beef Stock Cube

  • Tomato Polpa ( I use half a tin)

  • Gbejna ta l-ilma (soft Maltese cheeselet) I use 1 per person or Rikotta

  • 1 egg

  • Water

  • Salt & Pepper


Method:

  • Fry the onion until cooked add the potatoes, and stock, cover with water, until cooked.

  • Add the broad beans and the Kusksu, the tomato polpa and cover with water.

  • You need to stir continuously because the pasta will get stuck to the bottom once it starts cooking ( so don’t leave unattended.

  • When the pasta is cooked and the egg and ġbejniet ( soft cheeselets) or ricotta and cover and let to rest for 30 minutes before serving.
