Fresh Home made Pasta with a simple Mushroom sauce

Ingredients:

Calculate all the ingredients according to the number of people you are serving.

  • 200 gr Semola Flour

  • 300 gr '00' Flour

  • 3 eggs (medium)

  • 1tbsp Olive Oil

  • Water

  • Salt

  • Plus Biceps :)


Method:

  • In a bowl mix the Semola Flour, the 00 Flour and the salt.

  • Place the flour on a clean surface and make a hole in the centre

  • Pour the eggs in eggs in the middle and the olive oil and with a fork start mixing the eggs in the flour.

  • Add some water if you need. The pastry has to soft and bouncy.

  • Start kneading the pastry until you have a smooth consistency.

  • Set aside, let it rest and start cooking your sauce.


For the Mushroom Sauce you need the following ingredients:

Calculate amounts based on the number of people you are cooking for:

  • Mushrooms

  • Garlic

  • Olive Oil

  • Stock Veg, Beef or Chicken ( I used half)

  • Grated Parmesan Cheese

  • Water ( you will need a cup best to use the same water you boiled the pasta in)

  • Salt & Pepper


Method:

  • Chop the garlic and mushrooms and fry in the Olive Oil

  • Turn of once cooked


Let's go to the Pasta Dough

  • Start rolling it out, if you have a Pasta Machine it will be less tiring, if you need to exercise your biceps start rolling hahah, the thinnest possible, because once you cook the pasta in will grow.

  • Cut the pasta in vertical lines (see pic above)

  • Cook the pasta in boiling water, add salt as always


Let's go back to the sauce

  • Finally turn the sauce back on, add a cup of water (same you are using to cook the pasta in)

  • Cook until the stock has melted, once the pasta is cooked added in the pan to the sauce, add the Parmesan Cheese and mix until you have a slight creamy consistent.
