Filini Pasta Frittata with fresh Tomato & Basil Sauce.

Ingredients for the Frittata:
Filini Pasta
Eggs (I used 2 eggs in this recipe)
Parmesan
Olive Oil
Salt & Pepper
Ingredients for the Tomato & Basil Sauce:
Ripe Tomatoes
Onions
Fresh Basil Leaves
Olive Oil
Salt & Pepper
Method for the Frittata:
Cook the Filini Pasta as per package instructions
Beat the eggs and parmesan
Pour the egg mix with Filini Pasta
Heat a non stick pan and a little bit of Olive Oil
Add the Filini Pasta mixture. Add as much as you want depending how thick you want your Frittata
Cook until Golden and crispy on both sides
Method for the Tomato & Basil Sauce:
In a little bit of Olive Oil fry, the onions until cooked
Add the basil and tomatoes until the liquid is reduce but not completely absorbed
Serve the sauce on top of the Frittata. (You can also eat the Frittata without sauce)
