Caponata My Way

Ingredients:
Aubergines
Cherry Tomatoes
Green, Red, Yellow & Orange Peppers
Onions Parsley
Basil
Salt & Pepper
Water
Olive Oil
Method:
Chop all the ingredients in bite size.
Fry all the ingredients in Olive oil.
Add a cup or two of water. (All depending if you want the consistency watery or dense).
Cook for further 30 min on low heat.
You can use this Caponata as a side dish, you can do a lovely sandwich by adding some Tuna Chunks.
You can use it as a pasta sauce. Use your imagination.
