Baked Portobello Mushroom stuffed with Feta Cheese and coloured Peppers

Ingredients:


  • Portobello Mushroom (use 1 per person)

  • Green, Red, Orange, Yellow Peppers

  • Feta Cheese

  • Onion

  • Basil

  • Olive Oil

  • Half Cup water

  • Salt & Pepper


Method:


  • Clean the mushroom and scoop the inside slowly. Do not go deep because you break it.

  • Place the scraped mushroom in a bowl.

  • Method for the stuffing

  • Chop the onions and peppers in small cubes and fry in a spoon of Olive Oil and the basil, also add the scraped mushroom bits.

  • Add the water and cook until all the water is absorbed.

  • Brush the mushroom with a bit of Olive Oil and place in a dish.

  • Chop the Feta Cheese and put a few slices at the bottom

  • Add the peppers mixture on top.

  • Add a few pieces of Feta Cheese on top.

  • Bake till the mushroom is cooked.
